" This is a treat – a well-made preserve of full flavoured pheasant, carefully shredded and seasoned with an interesting combination of herbs, plus juniper and gin, to add a distinctive final flourish. The texture was excellent, not at all greasy, but with plenty of body. It spread well on toast, and was well-balanced, with the seasoning, herbs and gin enhancing the taste of the bird."
